Ingredients
- 4 lb. bone-in pork loin roast
- 1 (12 oz.) jar pineapple preserves
- 2 Tbsp. honey
- 2 Tbsp. red wine vinegar
- 1/4 tsp. salt
- 1 tsp. prepared mustard
- 1/4 tsp. ground cinnamon
- 1/4 tsp. ground cloves
- 1 (8 oz.) can pineapple slices, drained
Method
- Place roast on rack in shallow roasting pan.
- Insert meat thermometer into thickest part of roast, not touching bone. Roast, uncovered, in 325° oven until thermometer registers 170°, about 2 1/2 hours.
