Ingredients

  • 4 chicken breasts, halved, boned and skinned
  • 3 eggs
  • 1/2 c. milk
  • 1 c. seasoned bread crumbs
  • 2 to 4 Tbsp. butter or margarine
  • 8 slices Muenster cheese (8 oz.)
  • button mushrooms (if fresh, saute in butter)
  • white wine

Method

  • Beat eggs and milk.
  • Place chicken in egg mixture.
  • Marinate in refrigerator 2 to 4 hours.
  • Turn chicken every 30 minutes.
  • Remove chicken from marinade and roll in crumbs.
  • Brown in butter.
  • Place chicken in a 9 x 13-inch baking dish.
  • Cover with cheese slices and mushrooms.
  • Heat oven to 350°.
  • Bake for 20 to 25 minutes. Sprinkle with wine twice during baking.
  • Serve with wild rice. Serves 8 people.
