Ingredients
- 4 black ducks
- 1/4 lb. fat
- 6 shallots
- 5 carrots
- 1/2 c. juniper berries
- wild cherries
Method
- Chop shallots and carrots.
- Brown ducks and shallots in a large frying pan until all blood is cooked.
- Pour some fat into roasting pan; add carrots, juniper
- and cherries.
- Place ducks on top of mixture and roast at 350° for 3 hours,
- basting often.
