Ingredients

  • 1 1/3 lbs frozen raspberries, just thawed
  • 1 cup freshly squeezed orange juice
  • 1/2 cup powdered sugar
  • 1 None vanilla bean, split and seeds scraped
  • 4 cups club soda, chilled

Method

  • Place raspberries, orange juice, sugar and vanilla seeds in a large saucepan on low heat. Cook, stirring occasionally, for 10 mins, or until it thickens into a syrup. Remove from heat. Set aside for 30 mins to cool.
  • Pour syrup through fine sieve into a bowl, pressing down slightly with back of spoon.
  • Pour into 5 glasses and top with club soda.
