Ingredients

  • 2 tsp baking powder
  • 300 grams all purpose(plain) flour
  • 1 tbsp ground cinnamon
  • 100 grams walnuts, chopped
  • 100 grams desiccated coconut
  • 300 grams grated carrots
  • 300 ml light vegetable oil
  • 1 tbsp vanilla extract
  • 125 grams wholemeal flour
  • 300 grams superfine (caster) sugar
  • 4 large eggs, lightly beaten

Method

  • Preheat the oven to 180C.
  • Grease and line 900 grams loaf pan.
  • Sift the all purpose flour, wholemeal flour, baking powder and ground cinnamon into a bowl.
  • Stir in the nuts, coconut and carrots
  • Pour the oil, vanilla and sugar into a bowl and whisk together, then whisk in the eggs.
  • Add the dry ingredients to the wet ingredients.
  • Combine everything together.
  • Pour the mixture into the pan.
  • Bake for 45 minutes or until lightly browned.
  • Insert a toothpick into the center of the bread.
  • If it comes out clean, the bread is ready.
