Ingredients

  • 2 cups Uncle Ben's converted brand rice
  • 4 cups cooked chicken
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 (14 ounce) cans diced tomatoes
  • 2 tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 4 cups chicken broth
  • 1 cup cheddar cheese
  • 1 cup black olives, sliced
  • 2 tablespoons cooking oil

Method

  • In a large skillet, cook ground beef, until brown.
  • Add the onions and the bell peppers and cook until tender.
  • Add tomato paste, diced tomatoes, and stir well.
  • Add the remaining ingredients.
  • Bring to a boil.
  • Reduce heat and simmer for one hour over low heat.
  • Mean while cook pasta according to package directions.
  • Serve the chilli over the hot, cooked pasta.
