Ingredients

  • 2 lb. fresh spinach, or 3 (10 oz.) pkg. frozen chopped spinach
  • 6 eggs
  • 1/2 lb. Feta cheese
  • 8 oz. cottage cheese
  • 1 lb. Ricotta cheese
  • a little Parmesan cheese
  • 1/2 bunch parsley, chopped
  • 1/2 bunch dill, chopped
  • 1 bunch green onion, chopped
  • 2 Tbsp. bread crumbs
  • 1 lb. phyllo (filo) dough
  • melted butter

Method

  • Mix all ingredients together.
  • Layer 5 sheets of dough, brushing each layer with melted butter.
  • Spread 1/3 of ingredients over top layer to 1/4-inch from edges.
  • Roll like a jelly roll. Cut into pieces with knife.
  • Repeat procedure for 2 more rolls. Bake at 375°
  • for 30 to 35 minutes, or freeze to be baked and served later.
  • Also good served cold.
