Ingredients

  • 1/2 c. olive oil
  • 3 large cloves garlic, minced
  • 1/2 (2 oz.) bottle capers (rung out)
  • 1 1/2 or 2 (2 oz.) cans anchovies
  • 1/4 to 1/2 c. fresh parsley
  • 1 lb. cooked spaghetti
  • good fresh grated cheese

Method

  • Put all sauce ingredients in frypan.
  • Cook over low heat for 5 minutes.
  • Then mash with fork to break up anchovies and capers. Add 1/3 cup of water and let cook, slowly, about 15 to 20 minutes. (Don't burn that garlic.)
  • Pour over cooked spaghetti with lots of grated cheese.
  • (May want to save a little boiled water from spaghetti to add if dish is too dry, as grated cheese is drying.
  • I usually don't need the extra water.)
