Ingredients
- 1/2 c. olive oil
- 3 large cloves garlic, minced
- 1/2 (2 oz.) bottle capers (rung out)
- 1 1/2 or 2 (2 oz.) cans anchovies
- 1/4 to 1/2 c. fresh parsley
- 1 lb. cooked spaghetti
- good fresh grated cheese
Method
- Put all sauce ingredients in frypan.
- Cook over low heat for 5 minutes.
- Then mash with fork to break up anchovies and capers. Add 1/3 cup of water and let cook, slowly, about 15 to 20 minutes. (Don't burn that garlic.)
- Pour over cooked spaghetti with lots of grated cheese.
- (May want to save a little boiled water from spaghetti to add if dish is too dry, as grated cheese is drying.
- I usually don't need the extra water.)
