Ingredients
- 2 young, tender rabbits
- 4 Tbsp. vinegar
- salt, pepper and butter
- 2 onions, minced
- 1 Tbsp. flour
- 2 Tbsp. minced ham
- 1 garlic clove, minced
- 1 sprig thyme
- 1 bay leaf
- 3 sprigs parsley
- 1 c. chopped mushrooms
Method
- Clean rabbits, then cut in pieces at joints.
- Cover with cold water.
- Add vinegar and let stand overnight.
- Drain and dry well. Rub with salt, pepper and butter.
- Place in baking pan in 400° oven for 15 minutes.
