Ingredients

  • 1 c. dry white wine
  • 2 c. minced onion
  • 2/3 c. minced celery
  • 2/3 c. minced carrots
  • 2 c. chopped tomatoes
  • 1 1/2 lb. whitefish (cod, halibut, etc.)
  • 2 cucumbers
  • 4 c. water
  • 2 Tbsp. capers, drained
  • 2 Tbsp. minced gherkins
  • 2 Tbsp. fresh lemon juice
  • salt and freshly ground pepper
  • 4 Tbsp. minced parsley

Method

  • In a large soup pot, heat the wine.
  • Add the onion and cook until softened.
  • Add the celery, carrots and the tomatoes and continue to cook for 5 minutes.
  • Peel, seed and slice the cucumber (about 1 1/2 cups); cut the fish in large chunks.
  • Add both to the soup and cook 3 minutes longer.
  • Add the water; bring to a boil. Lower heat and simmer until the fish flakes easily (about 10 minutes).
  • Turn off the heat.
  • Add remaining ingredients and serve immediately.
  • Serves 6.
