Ingredients

  • 1/2 c. rice vinegar
  • juice of 1/2 lemon
  • 1/4 c. olive oil
  • 1 green and 1 red hot chili, seeded and slivered
  • 1/2 tsp. dried red pepper flakes
  • 3 slices lemon zest
  • 1 Tbsp. red chili paste
  • 1 lb. large shrimp, cleaned and deveined

Method

  • Combine all ingredients except shrimp.
  • Mix well.
  • Let stand 30 minutes before adding shrimp.
  • Marinate shrimp for 30 minutes. Skewer shrimp, piercing at head and tail.
  • Grill 2 to 3 minutes per side over red hot to medium hot fire.
  • Baste once after first turn.
