Ingredients
- 4 fresh sole fillets
- 4 Tbsp. butter
- 4 Tbsp. frozen orange concentrate
- 4 green onions
- salt and pepper to taste
Method
- Preheat oven to 450°.
- Lay 4 pieces of foil, each 10 inches long, on counter shiny-side up.
- Place one fillet in center of each.
- Place 1 teaspoon butter, 1 tablespoon orange concentrate and chopped green onion on each.
- Wrap and seal.
- Place on baking sheet.
- Bake for 15 minutes.
- The extra juice makes a nice sauce. Serve with rice and mandarin orange salad.
