Ingredients

  • 4 fresh sole fillets
  • 4 Tbsp. butter
  • 4 Tbsp. frozen orange concentrate
  • 4 green onions
  • salt and pepper to taste

Method

  • Preheat oven to 450°.
  • Lay 4 pieces of foil, each 10 inches long, on counter shiny-side up.
  • Place one fillet in center of each.
  • Place 1 teaspoon butter, 1 tablespoon orange concentrate and chopped green onion on each.
  • Wrap and seal.
  • Place on baking sheet.
  • Bake for 15 minutes.
  • The extra juice makes a nice sauce. Serve with rice and mandarin orange salad.
