Ingredients

  • 2 lbs head cabbage - quartered, cored and cut crosswise into 1/8 inch thick slices
  • 1 1/4 cups apple cider vinegar
  • 1 cup sugar
  • 1 cup shredded carrots
  • 4 green onion stalks, thinly sliced
  • 1/4 cup mayonnaise

Method

  • 1) Add cabbage, vinegar & sugar together in a large bowl & toss to combine.
  • 2) Cover & chill in fridge for 30 minutes
  • 3) Toss mixture again to incorporate, cover & chill for an additional 30 minutes.
  • 4) Drain the cabbage of all excess moisture.
  • *You can stop at this step the day before serving the slaw & chill the cabbage in the fridge before completing the next day.
  • 5) Add carrots, onions & mayo - toss to combine.
  • 6) Season to taste with pepper & other desired flavors/seasonings
  • 7) Serve!
