Ingredients
- 2 lbs head cabbage - quartered, cored and cut crosswise into 1/8 inch thick slices
- 1 1/4 cups apple cider vinegar
- 1 cup sugar
- 1 cup shredded carrots
- 4 green onion stalks, thinly sliced
- 1/4 cup mayonnaise
Method
- 1) Add cabbage, vinegar & sugar together in a large bowl & toss to combine.
- 2) Cover & chill in fridge for 30 minutes
- 3) Toss mixture again to incorporate, cover & chill for an additional 30 minutes.
- 4) Drain the cabbage of all excess moisture.
- *You can stop at this step the day before serving the slaw & chill the cabbage in the fridge before completing the next day.
- 5) Add carrots, onions & mayo - toss to combine.
- 6) Season to taste with pepper & other desired flavors/seasonings
- 7) Serve!
