Ingredients

  • 1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
  • 1 (14 ounce) packagesmoked Polish kielbasa (cut into 1/4-inch thick slices(then slices quartered)
  • 12 cup sliced green onion
  • 14 cup chopped red bell pepper
  • 3 cups chicken broth
  • 1 (14 ounce) cangreat northern white beans (rinsed & drained)
  • 1 large garlic clove (finely chopped)
  • 14 teaspoon oregano leaves (crushed)
  • 14 teaspoon black pepper
  • 14 teaspoon caraway seed
  • 12 tablespoon white wine vinegar
  • 14 teaspoon paprika
  • 2 tablespoons sliced green onion tops

Method

  • Cook and stir the sausage in a large skillet over medium heat til lightly browned.
  • Remove with slotted spoon and drain on paper towels.
  • Place sausage in a soup pot or Dutch oven.
  • Add all remaining ingredients EXCEPT Paprika and green onion tops.
  • Bring to a boil over medium-high heat--stirring occasionally.
  • Reduce heat, cover and simmer 15 minutes--stirring now & then.
  • Stir in the Paprika and green onion tops.
  • Cook just until stew is piping hot.
  • Ladle into large serving bowl or individual bowls and serve.
  • Crusty buttered bread of your choice is the perfect accompaniment to this dish.
