Ingredients
- 1 (23 ounce) can sweet potatoes (whole, undrained)
- 2 tablespoons butter
- 14 cup pecans (chopped)
- 8 pineapple rings
- 8 large marshmallows
Method
- Heat potatoes in syrup, drain, reserving 1/4 cup syrup.
- Mash potatoes with reserved syrup, add butter, (salt and pepper to taste) and pecans, cover to keep warm.
- Place pineapple rings on cookie sheet, broil until hot.
- Top each with a mound of sweet potatoes, then a marshmallow.
- Broil 5-6 min, or until marshmallows are golden brown.
- Serve immediately.
