Ingredients

  • 1 (23 ounce) can sweet potatoes (whole, undrained)
  • 2 tablespoons butter
  • 14 cup pecans (chopped)
  • 8 pineapple rings
  • 8 large marshmallows

Method

  • Heat potatoes in syrup, drain, reserving 1/4 cup syrup.
  • Mash potatoes with reserved syrup, add butter, (salt and pepper to taste) and pecans, cover to keep warm.
  • Place pineapple rings on cookie sheet, broil until hot.
  • Top each with a mound of sweet potatoes, then a marshmallow.
  • Broil 5-6 min, or until marshmallows are golden brown.
  • Serve immediately.
