- 1 Tbsp gelatin
- 1/4 cup cold water
- 1 cup boiling water
- 2/3 cup sugar
- 1 tsp grated lemon rind
- 1/4 cup lemon juice
- 1/4 tsp salt
- 2 egg whites
- 2 cups milk
- 2 egg yolks
- 1/4 cup sugar
- 1/4 tsp salt
- 1 tsp vanilla
Method
- Scald milk in top of double boiler.
- Beat egg yolks slightly. Add sugar and salt.
- Stir into egg mixture several spoons of scalded milk.
- Keep water in bottom of double boiler below boiling during rest of cooking time.
- Add egg mixture to scalded milk, stirring constantly.
- Cook until the custard thickens only enough to coat a metal spoon.
- Cool.
- Add vanilla.
- Store in covered dish in refrigerator until serving.
- Pour over individual servings and garnish.
