Ingredients

  • 1 Tbsp gelatin
  • 1/4 cup cold water
  • 1 cup boiling water
  • 2/3 cup sugar
  • 1 tsp grated lemon rind
  • 1/4 cup lemon juice
  • 1/4 tsp salt
  • 2 egg whites
  • 2 cups milk
  • 2 egg yolks
  • 1/4 cup sugar
  • 1/4 tsp salt
  • 1 tsp vanilla

Method

  • Scald milk in top of double boiler.
  • Beat egg yolks slightly. Add sugar and salt.
  • Stir into egg mixture several spoons of scalded milk.
  • Keep water in bottom of double boiler below boiling during rest of cooking time.
  • Add egg mixture to scalded milk, stirring constantly.
  • Cook until the custard thickens only enough to coat a metal spoon.
  • Cool.
  • Add vanilla.
  • Store in covered dish in refrigerator until serving.
  • Pour over individual servings and garnish.
