Ingredients

  • 5 eggs, separated
  • 1 c. sugar
  • 1 lb. cream cheese, at room temperature
  • 1 c. sour cream
  • 2 Tbsp. flour
  • 1 tsp. vanilla
  • 1/2 c. graham cracker crumbs
  • 1 Tbsp. sugar
  • 1/4 tsp. cinnamon

Method

  • Mix the last 3 ingredients and put in spring-form pan that has been dusted on bottom and sides.
  • Beat egg yolks until thick and lemon colored.
  • Beat in sugar.
  • Break up cream cheese; add sour cream and egg mixture, beating until smooth.
  • Add sour cream, flour and vanilla.
  • Continue beating until smooth.
  • Beat egg whites until stiff, but not dry.
  • Gently fold into cheese mixture.
  • Heat oven to 275°.
  • Bake 70 minutes.
  • Turn oven off and leave in 1 hour without opening oven door.
