Ingredients
- 5 eggs, separated
- 1 c. sugar
- 1 lb. cream cheese, at room temperature
- 1 c. sour cream
- 2 Tbsp. flour
- 1 tsp. vanilla
- 1/2 c. graham cracker crumbs
- 1 Tbsp. sugar
- 1/4 tsp. cinnamon
Method
- Mix the last 3 ingredients and put in spring-form pan that has been dusted on bottom and sides.
- Beat egg yolks until thick and lemon colored.
- Beat in sugar.
- Break up cream cheese; add sour cream and egg mixture, beating until smooth.
- Add sour cream, flour and vanilla.
- Continue beating until smooth.
- Beat egg whites until stiff, but not dry.
- Gently fold into cheese mixture.
- Heat oven to 275°.
- Bake 70 minutes.
- Turn oven off and leave in 1 hour without opening oven door.
