Ingredients

  • 2 eggs, beaten
  • 1 1/2 c. sugar
  • 1/2 tsp. salt
  • 3 Tbsp. flour
  • 2 1/2 c. pumpkin or 1 (16 oz.) can solid pumpkin
  • 2 tsp. pumpkin spice
  • 1/4 c. milk
  • 2 (9-inch) pie shells

Method

  • Preheat oven at 350°.
  • Place pie shells into oven for 3 minutes.
  • Take out mix one at a time egg, pumpkin, spice, milk, sugar and flour (mix sugar and flour together before adding).
  • Mix until smooth.
  • Pour into pie shells.
  • Bake at 425° for 10 minutes, then reduce heat to 350° for 35 minutes or until knife inserted in middle comes out clean.
  • Cool completely.
  • Garnish with whipped cream or Cool Whip.
