Ingredients
- 2 eggs, beaten
- 1 1/2 c. sugar
- 1/2 tsp. salt
- 3 Tbsp. flour
- 2 1/2 c. pumpkin or 1 (16 oz.) can solid pumpkin
- 2 tsp. pumpkin spice
- 1/4 c. milk
- 2 (9-inch) pie shells
Method
- Preheat oven at 350°.
- Place pie shells into oven for 3 minutes.
- Take out mix one at a time egg, pumpkin, spice, milk, sugar and flour (mix sugar and flour together before adding).
- Mix until smooth.
- Pour into pie shells.
- Bake at 425° for 10 minutes, then reduce heat to 350° for 35 minutes or until knife inserted in middle comes out clean.
- Cool completely.
- Garnish with whipped cream or Cool Whip.
