- 3 small red potatoes
- 1 (10 3/4 oz.) can cream of mushroom soup (97% fat free)
- 1 Tbsp. cornstarch, mixed with 1 c. skim milk
- 1 to 2 cans (2.8 oz. each) Durkee French fried onions, divided
- dash of black pepper
- 2 (16 oz.) cans green beans, drained
- 6 slices turkey bacon, cooked
- 1/4 c. water
- 2 c. cooked turkey ham chunks, mixed with 1 Tbsp. liquid smoke
Method
- Microwave potatoes on High 2 minutes on each side.
- Cool, peel and dice small.
- Combine all ingredients except save half of the onions.
- Pour into Pam sprayed 2 1/2-quart casserole dish.
- Bake uncovered in 350° oven 25 to 35 minutes.
- Top with remaining onions.
- Bake uncovered 2 to 5 minutes longer or until light brown.
