Ingredients

  • 3 small red potatoes
  • 1 (10 3/4 oz.) can cream of mushroom soup (97% fat free)
  • 1 Tbsp. cornstarch, mixed with 1 c. skim milk
  • 1 to 2 cans (2.8 oz. each) Durkee French fried onions, divided
  • dash of black pepper
  • 2 (16 oz.) cans green beans, drained
  • 6 slices turkey bacon, cooked
  • 1/4 c. water
  • 2 c. cooked turkey ham chunks, mixed with 1 Tbsp. liquid smoke

Method

  • Microwave potatoes on High 2 minutes on each side.
  • Cool, peel and dice small.
  • Combine all ingredients except save half of the onions.
  • Pour into Pam sprayed 2 1/2-quart casserole dish.
  • Bake uncovered in 350° oven 25 to 35 minutes.
  • Top with remaining onions.
  • Bake uncovered 2 to 5 minutes longer or until light brown.
