Ingredients
- 2 (16 oz.) cans black-eyed peas
- 1 (14 1/2 oz.) can stewed tomatoes, cut
- 2 tsp. seasoned salt (Lawry's)
- 1 1/2 tsp. basil
- 1/2 tsp. black pepper
- 1 medium onion, sliced
- 1/4 tsp. cayenne pepper
- 2 lb. smoked turkey
- 1/2 tsp. thyme
- rice
Method
- Combine all ingredients except turkey and rice in a 6-quart stockpot.
- Add smoked turkey.
- Bring to boil.
- Cover, reduce heat and simmer 30 minutes.
- Uncover and simmer another 30 minutes. Remove turkey and slice meat from bones. Stir turkey meat back into pea mixture.
- Serve over rice.
- Serves 6.
