Ingredients

  • 2 (16 oz.) cans black-eyed peas
  • 1 (14 1/2 oz.) can stewed tomatoes, cut
  • 2 tsp. seasoned salt (Lawry's)
  • 1 1/2 tsp. basil
  • 1/2 tsp. black pepper
  • 1 medium onion, sliced
  • 1/4 tsp. cayenne pepper
  • 2 lb. smoked turkey
  • 1/2 tsp. thyme
  • rice

Method

  • Combine all ingredients except turkey and rice in a 6-quart stockpot.
  • Add smoked turkey.
  • Bring to boil.
  • Cover, reduce heat and simmer 30 minutes.
  • Uncover and simmer another 30 minutes. Remove turkey and slice meat from bones. Stir turkey meat back into pea mixture.
  • Serve over rice.
  • Serves 6.
