Ingredients
- 1 lb. smoked sausage
- 3 carrots, coarsely cut
- 2 to 3 celery stalks (leaves also), coarsely cut
- 1 onion, coarsely cut
- 1 bay leaf
- 3 to 5 peppercorns
- 1/2 c. chopped parsley
- 3 potatoes, cut into bite size
Method
- Preboil smoked sausage to remove a bit of the excess fat and then cut into bite size pieces.
- Place sausage pieces in a saucepan.
- Fill with water just to cover meat.
- Add all other ingredients, except potatoes.
- Cook for 1/2 hour, stirring occasionally.
- Add potatoes and cook until soft.
- Add salt and pepper to taste.
- Serve with bread.
