Ingredients

  • 1 lb. smoked sausage
  • 3 carrots, coarsely cut
  • 2 to 3 celery stalks (leaves also), coarsely cut
  • 1 onion, coarsely cut
  • 1 bay leaf
  • 3 to 5 peppercorns
  • 1/2 c. chopped parsley
  • 3 potatoes, cut into bite size

Method

  • Preboil smoked sausage to remove a bit of the excess fat and then cut into bite size pieces.
  • Place sausage pieces in a saucepan.
  • Fill with water just to cover meat.
  • Add all other ingredients, except potatoes.
  • Cook for 1/2 hour, stirring occasionally.
  • Add potatoes and cook until soft.
  • Add salt and pepper to taste.
  • Serve with bread.
