Ingredients

  • 1 large Vidalia or sweet onion, diced
  • 1 (15oz) can tomato sauce
  • 1 (15oz) can diced tomatoes
  • 1 can water (Use an empty tomato can. If you double the recipe start with one can water and add more if needed.)
  • 1 large sweet potato, peeled and diced into 1" chunks
  • 1 large dried chipotle pepper (usually in the produce section)
  • 1 lb ground beef
  • 1 lb ground sausage (if doubling the recipe)
  • 1 1/2 tbsp pure cacao powder
  • 1/2 tsp red pepper flakes
  • 1 tsp cumin
  • 2 tsp fresh sage, minced
  • 1 tsp fresh oregano, minced
  • 2 garlic cloves, minced
  • salt, to taste
  • Avocado (optional, for serving)

Method

  • Brown beef and onion.
  • Drain and place in slow cooker with all remaining ingredients.
  • Cook on low all day, 8-10 hours, stirring occasionally.
  • Serve topped with fresh avocado slices.
