Ingredients

  • 1 can cream of mushroom with roasted garlic soup mix
  • 1 can condensed beef broth
  • 1 envelope dry onion-mushroom dip/soup mix
  • 1 4lb eye of round roast (or chuck roast, or pot roast)
  • 2 tbsp all purpose flour
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp veg oil
  • Assorted chopped root vegetables

Method

  • Stir together first 3 ingredients in a slow cooker. Sprinkle roast evenly with flour, salt and pepper. Brown roast on all sides in hot oil in a large dutch oven over med/high heat. Transfer roast to slow cooker. Cover and cook on low 7 hours. Add vegetables. Cook additional 2 hours.
