Ingredients
- 1 (10-ounce) package frozen unsweetened raspberries, thawed
- 2 tablespoons raspberry vinegar
- 4 teaspoons honey
- 1 small cantaloupe
- 10 Boston lettuce leaves
- 2 tablespoons chopped fresh mint
Method
- Place first 3 ingredients in a food processor or electric blender; process until pureed. Pour through a wire mesh strainer to remove seeds.
- Peel and slice cantaloupe. Place lettuce leaves and cantaloupe slices on 5 salad plates. Drizzle with raspberry sauce. Sprinkle with mint.
