Ingredients

  • 1/3 c. butter
  • 2/3 c. sugar
  • 1/2 c. packed brown sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1 1/2 tsp. allspice
  • 1 tsp. orange rind
  • 2 c. flour
  • 1 1/2 tsp. baking powder
  • 1/8 tsp. soda
  • 1/2 tsp. salt
  • 1/2 c. orange juice
  • 1 1/2 c. cranberries, halved
  • 1/2 c. chopped pecans

Method

  • Heat oven to 350°.
  • Grease a 9 x 5 x 3-inch loaf pan.
  • Mix sugar and butter.
  • Add eggs.
  • Stir in juice, vanilla and orange rind.
  • Blend dry ingredients; add to butter mixture.
  • Fold in cranberries and nuts.
  • Bake for 1 hour and 10 minutes.
