Ingredients

  • 4 medium potatoes
  • 1 tsp. salt
  • 2 to 3 Tbsp. butter, melted
  • 2 to 3 Tbsp. fresh herbs, chopped (parsley, chives, etc.)
  • 4 Tbsp. grated Cheddar cheese
  • 1 1/2 Tbsp. Parmesan cheese

Method

  • Peel potatoes.
  • Cut into thin slices, not all the way through. Place in dish that is microwave-safe.
  • Sprinkle with melted butter and herbs. Microwave on High for 10 minutes.
  • Rearrange potatoes after 5 minutes.
  • Let rest 5 minutes.
  • Sprinkle with cheeses and microwave 4 to 6 minutes at High until cheeses are melted and potatoes are soft.
  • Serve.
