Ingredients
- 4 medium potatoes
- 1 tsp. salt
- 2 to 3 Tbsp. butter, melted
- 2 to 3 Tbsp. fresh herbs, chopped (parsley, chives, etc.)
- 4 Tbsp. grated Cheddar cheese
- 1 1/2 Tbsp. Parmesan cheese
Method
- Peel potatoes.
- Cut into thin slices, not all the way through. Place in dish that is microwave-safe.
- Sprinkle with melted butter and herbs. Microwave on High for 10 minutes.
- Rearrange potatoes after 5 minutes.
- Let rest 5 minutes.
- Sprinkle with cheeses and microwave 4 to 6 minutes at High until cheeses are melted and potatoes are soft.
- Serve.
