Ingredients

  • 1 Tbsp. margarine
  • 2 small apples, pared, cored and cubed
  • 2 Tbsp. minced onions
  • 2 Tbsp. packed brown sugar
  • 1 tsp. lemon juice
  • 1/4 tsp. salt
  • 1/8 tsp. cinnamon
  • dash of nutmeg
  • 6 oz. peeled and cooked yams, cooled and cubed

Method

  • In 10-inch skillet, heat margarine over medium heat, add apples and onions and saute, stirring occasionally, until apples are soft, 4 to 5 minutes.
  • Sprinkle with sugar, lemon juice and seasonings.
  • Cook, stirring constantly until sugar is melted.
  • Add yam cubes and cook until yams are heated through.
