Ingredients

  • 50 g butter
  • 1 onion, finely diced
  • 2 teaspoons keen's curry powder
  • 500 g meat (either diced chicken breast, steak or sausages)
  • 2 large potatoes
  • 300 g pumpkin
  • 2 apples
  • 1 zucchini, diced
  • 12 cup sultana
  • 1 can spiral organic coconut cream
  • rice, to serve

Method

  • Melt butter in large saucepan over medium heat.
  • Saute onion until translucent.
  • Add curry powder and stir through.
  • Add meat and brown.
  • If using sausages brown in seperate pan before adding.
  • Add vegetables and stir for a minute or two until all coated with curry powder.
  • Add coconut cream, apple and sultanas, turn down heat to low and simmer for 20-25mins.
  • Serve with rice.
