Ingredients
- 1 head broccoli
- 1 (8 oz.) can enchilada sauce
- Cheddar cheese
Method
- Cut broccoli into 1 to 1 1/2-inch pieces.
- Place in saucepan with sauce.
- Cover and let simmer for 8 to 10 minutes.
- Melt cheese on tortilla and put 3 to 4 tablespoons broccoli in middle.
- Top with your favorite enchilada ingredients (sour cream, salsa, olives, etc.).
