Ingredients

  • 2 lb. jumbo shrimp
  • 3 cloves garlic, minced
  • 3/4 c. olive oil (approximately)
  • juice of 1/2 lemon
  • lemon wedges
  • 1 Tbsp. minced parsley

Method

  • Slit each shrimp down the back without removing the shell. Flatten and place cut side up in a shallow broiler pan.
  • Sprinkle with the garlic and olive oil and put under a preheated broiler. Broil 3 minutes, then turn the shrimp.
  • Broil an additional 4 minutes, or until the flesh is opaque and the shrimp are cooked through.
  • Transfer to a warmed platter.
  • Pour the cooking liquid over the shrimp and sprinkle with the parsley and lemon juice. Garnish with lemon wedges.
  • Makes 4 servings.
