Ingredients
- 2 lb. jumbo shrimp
- 3 cloves garlic, minced
- 3/4 c. olive oil (approximately)
- juice of 1/2 lemon
- lemon wedges
- 1 Tbsp. minced parsley
Method
- Slit each shrimp down the back without removing the shell. Flatten and place cut side up in a shallow broiler pan.
- Sprinkle with the garlic and olive oil and put under a preheated broiler. Broil 3 minutes, then turn the shrimp.
- Broil an additional 4 minutes, or until the flesh is opaque and the shrimp are cooked through.
- Transfer to a warmed platter.
- Pour the cooking liquid over the shrimp and sprinkle with the parsley and lemon juice. Garnish with lemon wedges.
- Makes 4 servings.
