- 2 teaspoons Olive Oil
- 1 whole Small Onion, Finely Chopped
- 1 Tablespoon Prepared Minced Garlic
- 1 Tablespoon Lemon Juice
- 2 Tablespoons White Wine
- 1/2 teaspoons Dried Oregano
- 1/4 teaspoons Ground Black Pepper
- 1 can (14.5-ounce) Diced Tomatoes, Drained
- 1- 1/2 pound Large Shrimp, Peeled And Deveined
- 1/2 cups (2 Ounces) Crumbled Feta Cheese
- 1/4 cups Chopped Fresh Parsley
Method
- Preheat oven to 450 degrees .
- Coat an 11x7 baking dish with cooking spray and set aside.
- Heat a large nonstick skillet over medium-high heat.
- Add oil to pan, swirling to coat.
- Add onion and garlic to pan and saute for 2-3 minutes.
- Add lemon juice, wine, oregano, pepper, and tomatoes; bring to a boil.
- Reduce heat, and simmer 5 minutes.
- Stir in shrimp.
- Place mixture in baking dish.
- Sprinkle cheese evenly over mixture and bake for 10 minutes or until shrimp are done and cheese melts.
- Sprinkle with parsley; serve immediately.
