Ingredients

  • 2 teaspoons Olive Oil
  • 1 whole Small Onion, Finely Chopped
  • 1 Tablespoon Prepared Minced Garlic
  • 1 Tablespoon Lemon Juice
  • 2 Tablespoons White Wine
  • 1/2 teaspoons Dried Oregano
  • 1/4 teaspoons Ground Black Pepper
  • 1 can (14.5-ounce) Diced Tomatoes, Drained
  • 1- 1/2 pound Large Shrimp, Peeled And Deveined
  • 1/2 cups (2 Ounces) Crumbled Feta Cheese
  • 1/4 cups Chopped Fresh Parsley

Method

  • Preheat oven to 450 degrees .
  • Coat an 11x7 baking dish with cooking spray and set aside.
  • Heat a large nonstick skillet over medium-high heat.
  • Add oil to pan, swirling to coat.
  • Add onion and garlic to pan and saute for 2-3 minutes.
  • Add lemon juice, wine, oregano, pepper, and tomatoes; bring to a boil.
  • Reduce heat, and simmer 5 minutes.
  • Stir in shrimp.
  • Place mixture in baking dish.
  • Sprinkle cheese evenly over mixture and bake for 10 minutes or until shrimp are done and cheese melts.
  • Sprinkle with parsley; serve immediately.
