Ingredients
- 6 large fresh cleaned shrimp, tails removed
- 2 slice white bread with crusts cut off
- 1 scallion
- 1 clove garlic
- 1/2 tbsp corn starch
- 1 tsp soy sauce
- 1/8 tsp salt
- 1 several cups of oil used to deep fry, amount varies by method used for frying
Method
- In food processor, add all ingredients except oil.
- Shrimp should be cleaned, shelled and tail removed.
- Pulse several times to achieve a fine chop.
- Do not pulse into a paste!
- On one slice of bread with crust removed, spread with shrimp mixture.
- Top with other slice of bread.
- Cut bread into four triangles.
- In deep fryer or deep skillet bring oil to 350F.
- Fry shrimp toast 1-2 minutes per side.
- You are looking for a light golden brown color.
- I only make the one serving but you may easily double and triple recipe.
- I suggest making enough to enjoy freshly made.
- Leftovers are not suggested.
