Ingredients

  • 6 large fresh cleaned shrimp, tails removed
  • 2 slice white bread with crusts cut off
  • 1 scallion
  • 1 clove garlic
  • 1/2 tbsp corn starch
  • 1 tsp soy sauce
  • 1/8 tsp salt
  • 1 several cups of oil used to deep fry, amount varies by method used for frying

Method

  • In food processor, add all ingredients except oil.
  • Shrimp should be cleaned, shelled and tail removed.
  • Pulse several times to achieve a fine chop.
  • Do not pulse into a paste!
  • On one slice of bread with crust removed, spread with shrimp mixture.
  • Top with other slice of bread.
  • Cut bread into four triangles.
  • In deep fryer or deep skillet bring oil to 350F.
  • Fry shrimp toast 1-2 minutes per side.
  • You are looking for a light golden brown color.
  • I only make the one serving but you may easily double and triple recipe.
  • I suggest making enough to enjoy freshly made.
  • Leftovers are not suggested.
