Ingredients

  • 6 slices bacon
  • 1/2 c. chopped onion
  • 1 medium clove garlic, minced
  • 1 can whole tomatoes, cut up
  • 1 medium green pepper, chopped
  • 1/4 tsp. liquid red pepper (Tabasco)
  • 1/2 tsp. black pepper
  • 1 medium bay leaf
  • 1 large carrot, thinly sliced
  • 2 medium celery stalks, sliced
  • 2 medium potatoes, cubed
  • 2 tsp. salt
  • 2 cans shrimp or 1 pkg. precooked shrimp

Method

  • Fry bacon until crisp, drain and crumble.
  • Saute onion and garlic in bacon drippings.
  • Add tomatoes and liquid.
  • Add remaining ingredients, except shrimp.
  • Cook to boiling point, reduce heat and simmer 40 minutes, with pot covered.
  • Add shrimp and cook until heated through.
  • Garnish servings with crumbled bacon (1/3 cup dry white wine may be added before serving). Yields 4 servings.
