Ingredients
- 4 eggs
- 2 Tbsp. milk
- 1 (4 1/2 oz.) can shrimp
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/4 tsp. prepared mustard
- 2 English muffins, split
- butter or margarine
Method
- In medium bowl with fork, beat eggs and milk slightly.
- Stir in shrimp, salt, pepper and mustard.
- Meanwhile, toast English muffins.
- Spread with butter; keep warm.
- In an 8-inch skillet over medium heat, melt 1 tablespoon butter or margarine.
- Add egg mixture and cook, stirring once or twice with fork, until eggs are set.
- Spoon over muffin halves.
