Ingredients

  • 4 eggs
  • 2 Tbsp. milk
  • 1 (4 1/2 oz.) can shrimp
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/4 tsp. prepared mustard
  • 2 English muffins, split
  • butter or margarine

Method

  • In medium bowl with fork, beat eggs and milk slightly.
  • Stir in shrimp, salt, pepper and mustard.
  • Meanwhile, toast English muffins.
  • Spread with butter; keep warm.
  • In an 8-inch skillet over medium heat, melt 1 tablespoon butter or margarine.
  • Add egg mixture and cook, stirring once or twice with fork, until eggs are set.
  • Spoon over muffin halves.
