Ingredients

  • 7 oz small cooked shrimp
  • 2 tsp chopped dill
  • 1 tbsp olive oil
  • 1 None Finely grated zest of 1 lemon, plus 1 tbsp juice
  • 4 tbsp mayonnaise
  • 1 tbsp tomato ketchup
  • 2 tsp brandy
  • 1/2 small cucumber, de-seeded and diced
  • 6 None radishes, diced
  • None None Breadsticks,to serve
  • None None Lemon slice, quartered and dill sprigs, to garnish

Method

  • Combine the shrimp, dill, olive oil, lemon zest, and juice and leave to marinate for 30 minutes.
  • In a separate bowl mix together the mayonnaise, ketchup, brandy and a pinch of salt.
  • Layer the shrimp mixture, cucumber, radishes, and mayonnaise in small glasses. Serve garnished with grissini sticks, the lemon pieces and sprigs of dill.
