- 7 oz small cooked shrimp
- 2 tsp chopped dill
- 1 tbsp olive oil
- 1 None Finely grated zest of 1 lemon, plus 1 tbsp juice
- 4 tbsp mayonnaise
- 1 tbsp tomato ketchup
- 2 tsp brandy
- 1/2 small cucumber, de-seeded and diced
- 6 None radishes, diced
- None None Breadsticks,to serve
- None None Lemon slice, quartered and dill sprigs, to garnish
Method
- Combine the shrimp, dill, olive oil, lemon zest, and juice and leave to marinate for 30 minutes.
- In a separate bowl mix together the mayonnaise, ketchup, brandy and a pinch of salt.
- Layer the shrimp mixture, cucumber, radishes, and mayonnaise in small glasses. Serve garnished with grissini sticks, the lemon pieces and sprigs of dill.
