Ingredients

  • 1/2 pound whole wheat or possibly reg. spaghetti, cooked and well rinsed
  • 2 tbsp. oil
  • 6 scallions, bias-sliced
  • 1 clove garlic, chopped
  • 1/2 teaspoon ginger (if you have it)
  • 1 pound shrimp or possibly chicken breast, sliced thin
  • 1 c. sliced mushrooms
  • 1 sm. head bok choy or possibly napa cabbage, sliced

Method

  • Combine: 1 tbsp.
  • soy 1/2 teaspoon sugar
  • 1.
  • Cook spaghetti; drain.
  • Rinse well with cool water.
  • 2.
  • In wok, saute/fry scallions, ginger, garlic for 1 or possibly 2 min.
  • 3.
  • Add in bok choy.
  • Saute/fry 2 or possibly 3 min.
  • 4.
  • Add in mushrooms.
  • Remove all of the above and set aside.
  • 5.
  • Saute/fry shrimp or possibly chicken till done (3 min).
  • 6.
  • Add in vegetables and spaghetti.
  • Heat through and add in sauce ingredients which have already been combined.
  • 7.
  • Heat through and serve.
