Ingredients
- 1 T cocoa powder
- 2 T chile powder
- 1/4 cup peanut butter
- 16 oz tomato sauce
- 1 green bell pepper, seeded and chopped
- salt and pepper
- 2 1/2 lbs shrimp, peeled and deveined
- crushed peanuts for garnish
- cooked rice, for serving
Method
- in a bowl, combine cocoa and chilie powders. Stir in enough water to form a paste. Stir in the peanut butter and tomato sauce. Add the chopped bell pepper and season with salt and pepper
- In a pot over med heat, bring the mixture to a simmer. continue simmering for 20 min. stir in the shrimp and cook 5 min. Garnish with peanuts and serve over rice
