Ingredients

  • 3 to 4 c. cooked rice
  • 1 (8 oz.) can pineapple chunks, reserve juice
  • 1 c. mayonnaise
  • 1 tsp. prepared mustard
  • 1/2 tsp. salt
  • slivered almonds
  • 1/2 c. green pepper, chopped
  • 1/4 c. green onions, sliced
  • 1 lb. ham, diced
  • 1 c. Swiss cheese, shredded

Method

  • Place rice in a large bowl.
  • Pour pineapple liquid into small bowl.
  • Beat in mayonnaise, mustard and salt.
  • To rice, add pineapple chunks, peppers, onions and ham.
  • Add dressing and mix well.
  • Add cheese.
  • Toss lightly.
  • Chill at least one hour.
  • Top with slivered almonds.
  • Serves 6 to 8.
