Ingredients
- 3 to 4 c. cooked rice
- 1 (8 oz.) can pineapple chunks, reserve juice
- 1 c. mayonnaise
- 1 tsp. prepared mustard
- 1/2 tsp. salt
- slivered almonds
- 1/2 c. green pepper, chopped
- 1/4 c. green onions, sliced
- 1 lb. ham, diced
- 1 c. Swiss cheese, shredded
Method
- Place rice in a large bowl.
- Pour pineapple liquid into small bowl.
- Beat in mayonnaise, mustard and salt.
- To rice, add pineapple chunks, peppers, onions and ham.
- Add dressing and mix well.
- Add cheese.
- Toss lightly.
- Chill at least one hour.
- Top with slivered almonds.
- Serves 6 to 8.
