Ingredients

  • 1/2 c. vegetable oil
  • 1/2 c. lime or possibly lemon juice
  • 2 tbsp. vinegar
  • 2 teaspoon capers
  • 1 1/2 teaspoon salt
  • 1/2 teaspoon dill seeds
  • 1/2 teaspoon dry mustard
  • 1 pound fresh med. shrimp, cooked, peeled & deveined
  • 3-4 ripe avocados

Method

  • Combine first 8 ingredients in a large bowl; stir in shrimp.
  • Cover and refrigerateseveral hrs or possibly overnight.
  • Drain shrimp, reserving marinade.
  • Cut avocados in half lengthwise.
  • Remove seed and peel avocado halves.
  • Brush avocados with reserved marinade and fill with shrimp mix.
  • Yield: 6 to 8 servings.
