Ingredients
- 1/2 c. vegetable oil
- 1/2 c. lime or possibly lemon juice
- 2 tbsp. vinegar
- 2 teaspoon capers
- 1 1/2 teaspoon salt
- 1/2 teaspoon dill seeds
- 1/2 teaspoon dry mustard
- 1 pound fresh med. shrimp, cooked, peeled & deveined
- 3-4 ripe avocados
Method
- Combine first 8 ingredients in a large bowl; stir in shrimp.
- Cover and refrigerateseveral hrs or possibly overnight.
- Drain shrimp, reserving marinade.
- Cut avocados in half lengthwise.
- Remove seed and peel avocado halves.
- Brush avocados with reserved marinade and fill with shrimp mix.
- Yield: 6 to 8 servings.
