Ingredients
- 2 green peppers, diced
- 1 large onion, diced
- 1/2 c. celery, diced
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 Tbsp. seafood seasoning
- 3 Tbsp. oleo
- 2 (28 oz.) cans tomatoes, chopped
- 1 lb. cooked shrimp, cooked and peeled
- hot cooked rice
Method
- Saute all ingredients (except shrimp and rice) until tender. Simmer 20 minutes.
- Add shrimp; stir until shrimp are pink.
- Serve immediately over rice.
- Serves 5 to 6.
