Ingredients

  • 1 whole Green Pepper, Diced
  • 2 stalks Celery, Chopped
  • 1 whole Medium Onion, Diced
  • 2 cups Water
  • 4 Tablespoons Butter
  • 4 Tablespoons Flour
  • 2 cups Half-and-half
  • 1 cup Sharp Cheddar Cheese, Grated
  • 1 jar Pimentos (4 Ounce Jar)
  • 1/2 teaspoons Salt
  • 18 teaspoons Pepper
  • 3 pounds Cooked, Deveined Shrimp
  • 1 pound Cooked Crab Meat
  • 3/4 cups Buttered Cracker Crumbs (Ritz)

Method

  • Preheat oven to 400 degrees F. Grease a 3 quart casserole dish.
  • Combine peppers, celery, onion and water and cook in a small saucepan over medium heat until veggies are tender.
  • Drain and set aside in a large bowl.
  • Make the cheese sauce: Melt the butter, then stir in the flour until smooth.
  • Gradually add the cream/half-and-half and cook until the mixture thickens, stirring constantly.
  • Add cheese, pimentos, salt and pepper.
  • Add the sauce, crab and shrimp to the veggies and mix.
  • Put in a 3 quart casserole dish.
  • Sprinkle with cracker crumbs and bake for 20 minutes.
