Ingredients

  • 1 1/2 lb. leftover roast beef
  • 1/2 c. diced onion
  • 2 Tbsp. vegetable oil
  • 1 Tbsp. butter
  • 1 Tbsp. salt
  • 1/2 Tbsp. pepper
  • 1/2 tsp. chopped garlic
  • 1 Tbsp. flour
  • 2 c. beef or chicken broth
  • 1/2 c. chopped parsley
  • 2 lb. mashed, potatoes
  • 1 1/3 c. milk
  • 3 eggs
  • salt and pepper

Method

  • Cut meat into 1/8-inch slices.
  • Heat oil and butter.
  • Saute onion.
  • Add garlic and flour; mix well.
  • Add broth, salt and pepper; bring to a boil.
  • Add meat; cover and cook 20 minutes. Stir in parsley.
  • Place stew in buttered dish.
