- 1 1/2 lb. leftover roast beef
- 1/2 c. diced onion
- 2 Tbsp. vegetable oil
- 1 Tbsp. butter
- 1 Tbsp. salt
- 1/2 Tbsp. pepper
- 1/2 tsp. chopped garlic
- 1 Tbsp. flour
- 2 c. beef or chicken broth
- 1/2 c. chopped parsley
- 2 lb. mashed, potatoes
- 1 1/3 c. milk
- 3 eggs
- salt and pepper
Method
- Cut meat into 1/8-inch slices.
- Heat oil and butter.
- Saute onion.
- Add garlic and flour; mix well.
- Add broth, salt and pepper; bring to a boil.
- Add meat; cover and cook 20 minutes. Stir in parsley.
- Place stew in buttered dish.
