Ingredients

  • 1/4 c. rice vinegar (or possibly cider)
  • 2 tbsp. sugar
  • 3/4 teaspoon salt
  • 1/2 tbsp. black pepper
  • 1 tbsp. sesame oil
  • 1/3 c. vegetable oil
  • 1 sm. head green cabbage, finely shredded
  • 4-5 scallions cut into 4" lengths & thinly sliced lengthwise
  • 3 tbsp. toasted sliced almonds
  • 1 (8 ounce.) can water chestnuts, liquid removed
  • 2 tbsp. toasted sesame seeds
  • 3 ounce. Ramen instant noodles, uncooked, broken up

Method

  • Combine first 4 ingredients and whisk in the 2 oils.
  • Set aside.
  • Combine rest of ingredients and toss thoroughly.
  • Chill till ready to serve.
  • Toss salad with oil and vinegar dressing and serve.
