Ingredients

  • 1 package linguine
  • salt
  • 1/2 c. creamy peanut butter
  • 1/4 c. soy sauce
  • 1/4 c. seasoned rice vinegar
  • 2 tbsp. Asian sesame oil
  • 1 tbsp. fresh lime juice
  • 1/2 tsp. crushed red pepper
  • 1 large red pepper
  • 3 Kirby cucumbers
  • 1/4 c. fresh cilantro leaves
  • 1 1/2 c. shredded carrots

Method

  • Heat large, covered saucepot of salted water to boiling over high heat.
  • Add pasta and cook as label directs.
  • Meanwhile, in large serving bowl, whisk peanut butter, soy sauce, vinegar, oil, lime juice, and crushed red pepper until smooth.
  • Cut red pepper and unpeeled cucumber into matchstick-thin strips.
  • Chop cilantro.
  • Drain pasta.
  • Rinse with cold water; drain.
  • Add pasta, cucumber, red pepper, and carrots to sauce in bowl; toss to coat.
  • Sprinkle with cilantro.
