- 1 package linguine
- salt
- 1/2 c. creamy peanut butter
- 1/4 c. soy sauce
- 1/4 c. seasoned rice vinegar
- 2 tbsp. Asian sesame oil
- 1 tbsp. fresh lime juice
- 1/2 tsp. crushed red pepper
- 1 large red pepper
- 3 Kirby cucumbers
- 1/4 c. fresh cilantro leaves
- 1 1/2 c. shredded carrots
Method
- Heat large, covered saucepot of salted water to boiling over high heat.
- Add pasta and cook as label directs.
- Meanwhile, in large serving bowl, whisk peanut butter, soy sauce, vinegar, oil, lime juice, and crushed red pepper until smooth.
- Cut red pepper and unpeeled cucumber into matchstick-thin strips.
- Chop cilantro.
- Drain pasta.
- Rinse with cold water; drain.
- Add pasta, cucumber, red pepper, and carrots to sauce in bowl; toss to coat.
- Sprinkle with cilantro.
