Ingredients
- 1/4 pound salt pork
- onion
- tomato 1 med.
- 1 clove garlic minced
- 1 tablespoon vegetable oil
- 1 1/2 cups long grain rice
- 3 cups boiling water
- salt
- pepper
Method
- Cook salt pork, onion, tomato and garlic in vegetable oil. Cover, medium heat, stirring frequently until onion is tender. Stir in rice, cook 5 minutes. Stir in boiling water.
- Reduce heat to low; simmer covered 10 minutes. Remove cover, cool stirring frequently until liquid is absorbed and rice is fluffy, 15 to 18 minutes. Season with salt and pepper. Makes 6 servings.
