Ingredients

  • 6 Tbsp. butter
  • 2 Tbsp. flour
  • 3 c. cooked lobster, shrimp, scallops, crab or whitefish (single or combination)
  • 1 tsp. nutmeg
  • 1 dash paprika
  • 1 tsp. salt
  • 3 Tbsp. sherry
  • 3 egg yolks
  • 2 c. cream
  • toast triangles, rice or pastry shells

Method

  • Melt butter over low heat in top of double boiler.
  • Stir in flour, seafood, nutmeg, salt, paprika and sherry.
  • Beat egg yolks slightly in small bowl.
  • Add cream; mix well.
  • Slowly pour egg mixture into seafood mixture.
  • Cook over hot water, stirring until just thickened.
  • Serve over toast points, cooked rice or pastry shells.
  • Makes 6 servings.
