Ingredients
- 6 Tbsp. butter
- 2 Tbsp. flour
- 3 c. cooked lobster, shrimp, scallops, crab or whitefish (single or combination)
- 1 tsp. nutmeg
- 1 dash paprika
- 1 tsp. salt
- 3 Tbsp. sherry
- 3 egg yolks
- 2 c. cream
- toast triangles, rice or pastry shells
Method
- Melt butter over low heat in top of double boiler.
- Stir in flour, seafood, nutmeg, salt, paprika and sherry.
- Beat egg yolks slightly in small bowl.
- Add cream; mix well.
- Slowly pour egg mixture into seafood mixture.
- Cook over hot water, stirring until just thickened.
- Serve over toast points, cooked rice or pastry shells.
- Makes 6 servings.
