Ingredients

  • 2 c. cooked chicken, chopped
  • 1/2 to 1 c. toasted almonds
  • 3 hard-boiled eggs, chopped
  • 2 c. crushed potato chips
  • chopped pimentos
  • 2 c. chopped celery
  • 2 Tbsp. chopped onion
  • 1 c. mayonnaise *
  • 2 Tbsp. lemon juice
  • 2 c. grated cheese

Method

  • Combine all ingredients, except cheese and chips.
  • Pile lightly into greased 9 x 12-inch casserole dish.
  • Cover with cheese.
  • Bake for 10 minutes or until cheese melts.
  • Cover with chips.
  • Bake until chips brown.
  • Make sure to watch close; chips brown fast.
  • Bake at 450° for 10 to 15 minutes.
