Ingredients
- 2 c. cooked chicken, chopped
- 1/2 to 1 c. toasted almonds
- 3 hard-boiled eggs, chopped
- 2 c. crushed potato chips
- chopped pimentos
- 2 c. chopped celery
- 2 Tbsp. chopped onion
- 1 c. mayonnaise *
- 2 Tbsp. lemon juice
- 2 c. grated cheese
Method
- Combine all ingredients, except cheese and chips.
- Pile lightly into greased 9 x 12-inch casserole dish.
- Cover with cheese.
- Bake for 10 minutes or until cheese melts.
- Cover with chips.
- Bake until chips brown.
- Make sure to watch close; chips brown fast.
- Bake at 450° for 10 to 15 minutes.
