Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon minced garlic
  • 2 cups chopped onions
  • 1 cup chopped celery
  • 1 12 cups green peppers
  • 2 lbs ground turkey
  • 1 (15 ounce) can tomato paste
  • 1 (14 1/2 ounce) can chopped tomatoes
  • 4 teaspoons oregano
  • 2 teaspoons basil
  • 12 teaspoon salt
  • 6 whole wheat lasagna noodles
  • 2 cups 1% cottage cheese
  • 2 cups reduced-fat mozzarella cheese

Method

  • Heat the oil in a large skillet and saute the garlic, onion, celery, bell pepper, and turkey.
  • Once the turkey is browned, drain off any fat/liquids.
  • Add the tomato paste, tomatoes, and seasonings and allow to simmer.
  • Heat the oven to 350 degrees F.
  • In a rectangular baking dish sprayed with nonstick cooking spray, make a layer of noodles, cottage cheese, sauce, and mozzarella cheese
  • Repeat to make two layers (one cup of mozzarella cheese over each layer).
  • Bake for 45 minutes.
