Ingredients

  • 1-1/2 cup Peanut Butter, Creamy
  • 1/2 cups Butter, Softened
  • 1 teaspoon Vanilla Extract
  • 3-3/4 cups Confectioners Sugar
  • 16 ounces, weight White Chocolate Bark Candy Coating
  • 1 Tablespoon Shortening
  • 1 package Red Decorating Gel
  • 1 package M & M Candies (you'll Need 30-40 Total)

Method

  • In a bowl, cream the peanut butter, butter and vanilla together. (I do this in my Kitchen Aid Stand Mixer and it does a marvelous job mixing it well). Gradually beat in the confectioners sugar.
  • Shape into 1 inch balls. Cover and refrigerate at least 30 minutes.
  • In a microwave-safe bowl, melt the candy coating and shortening together (use 50% heat and do it in 30 second bursts, stirring between each interval to make sure it doesn't scorch). Continue to heat and stir until smooth.
  • Dip peanut butter balls into coating and place on wax paper.
  • Place one M&M (plain side up) on top of each peanut butter ball. Let stand until well set.
  • Use red decorating gel to create "bloodshot" eyes.
