Ingredients

  • 1 med. onion, minced
  • 3 tbsp. butter
  • 3 tbsp. flour
  • 1 teaspoon salt
  • Black pepper
  • Dry mustard
  • 1/2 c. grated sharp cheddar cheese
  • 4 med. potatoes, boiled & sliced
  • 2 c. cooked ham
  • 1 1/2 c. lowfat milk

Method

  • Make sauce by sauteing onions in butter till tender.
  • Stir in flour, salt, dash of black pepper, dash of dry mustard.
  • Add in lowfat milk gradually and stir constantly till sauce thickens.
  • Add in grated cheese and continue stirring till cheese melts and sauce is blended.
  • In 2 1/2 qt casserole alternate layers of sliced potatoes and diced ham.
  • On each layer pour some of the sauce.
  • Pour remaining sauce over top.
  • Cover; bake at 350 degrees for 30 min.
  • Uncover and continue baking till top is light brown.
