Ingredients
- 1 med. onion, minced
- 3 tbsp. butter
- 3 tbsp. flour
- 1 teaspoon salt
- Black pepper
- Dry mustard
- 1/2 c. grated sharp cheddar cheese
- 4 med. potatoes, boiled & sliced
- 2 c. cooked ham
- 1 1/2 c. lowfat milk
Method
- Make sauce by sauteing onions in butter till tender.
- Stir in flour, salt, dash of black pepper, dash of dry mustard.
- Add in lowfat milk gradually and stir constantly till sauce thickens.
- Add in grated cheese and continue stirring till cheese melts and sauce is blended.
- In 2 1/2 qt casserole alternate layers of sliced potatoes and diced ham.
- On each layer pour some of the sauce.
- Pour remaining sauce over top.
- Cover; bake at 350 degrees for 30 min.
- Uncover and continue baking till top is light brown.
